I have written SO miuch[[taught, before the computer age] about oils and fats since probably 1982 and advised to use only extra virgin olive oil and cold-pressed non-refined sesam oil. Below you will find an excellent simple explanation of most of the material done in a very pleasant and knowledgeable way.

I wish this lady could give a course to Israeli dieticians and the Ministry of Health…..we would do so much better.
